So 27th August was National Burger day in the UK, who knew??!  Well not me until this year!

I thought I’d join in the mostly meat based fun by sharing my favourite BBQ burger recipe.  They’re a firm favorite whenever I make them;

Mexican Burgers

I use a burger press (available from ebay, Amazon etc. for less than a fiver) and some burger discs for ease.

  • 80g mince beef (not too lean, ask your butcher to do you some with some fat in it.  The fat adds flavour)
  • 1-2 jalapeno slices (use the jar kind, add more or less depending on how hot you like them!) – finely chopped
  • pinch of chilli powder
  • pinch of salt
  • small piece Manchego cheese (it’s going inside the burger so don’t make it too thick, 5mm should do you!)
  • pinch chopped flat leaf parsley

(This recipe scales up easily.  The above is for one burger, just multiply the ingredients by how many burgers you need)

  1. Put everything apart from the cheese in a bowl and really mix and smush up well with your hands.  The smushing up is key, it (along with the salt) helps bind the ingredients together so that you don’t get a crumbly burger when you cook it.
  2. Once well smushed, put a burger disc in the bottom of your press and put half the mixture inside.  Press it out to the edges before placing your cheese in the middle.  Then add the rest of the mixture, covering the cheese.
  3. Press together using the burger press.
  4. Remove from the press and mould edges to make sure the cheese won’t escape when cooked.
  5. Cook until piping hot throughout on the BBQ or under the grill (a good sign that it’s done is usually the cheese starting to ooze through the top

Serve with salad and a tasty bun (brioche or soda bread buns work well, or a good old Warburtons sliced bun is great if you’re doing lots on the BBQ)
